30 Days of Thanksgiving: Day 3--Gallo Pinto

Gallo Pinto, literally translated as "Painted Rooster," is the national food of Nicaragua. It is the staple food, too, eaten for breakfast and lunch and sometimes dinner. It is a delicious stir-fried mixture of rice and red beans. Charlotte could be very content eating this 3 times a day! Henry and I smother it with crema (Nica-style sour cream). Ruth and Mae eat theirs with ketchup. We are thankful for this simple but delicious dish! The only drawback of Gallo Pinto is our floors after we eat it. . .our children have not learned to eat rice neatly.



(Okay, let's be honest--they haven't learned to eat neatly period. Rice just accentuates that fact.)
