30 Days of Thanksgiving: Day 3--Tajada Tuesdays!

It is very easy to spend too much money at the cafetin (cafeteria) at NCA. Henry, Mae, and I eat lunch at the cafetin every school day, and Ruth joins me on Tuesdays for a quick lunch date. The food is great, cheap, and homemade. . .no giant walk-in freezers or industrial fridges in our school cafeteria. Nothing reheated. Carrots are peeled. Beans are sorted. Juice is made from scratch. Lunch today: breaded fish fillet, lime, pico de gallo, rice, corn tortilla. YUM!

And in addition to incredible lunches, a "snack" is also available for purchase in the AM. It is hard to say no! Snacks in Nicaragua are sandwiches, tacos, enchiladas, hot dogs, hamburgers. . .without rice, it isn't considered a meal! My favorite snack days are Tuesdays, when the lovely cafetin ladies Daysi, Beverly, Frances, and Blanca peel giant green plantains, slice them thin, and fry them into delicious, crunchy "chips." Served in a bag or on a plate with a chunk or two of salty Nicaraguan white cheese and smothered with Nica coleslaw, I could honestly eat this for every meal every day.

Today I'm thankful for food. For delicious Nicaragua food. For having (way) more than we need. For having easy access and never going without. Having the luxury of "snacks." Tajada Tuesday.
